My Go-To Mint Chip Smoothie!
I’ve never been an ice cream girl. I know, who doesn’t like ice cream? I was a mom’s worst nightmare at a birthday party as I grew up not liking pizza, soda, or ice cream. Every party they were scrambling to find something for me to eat and if it was an ice cream cake being served, I was the kid that said "no, thank you" and received confused looks from all of the parents.
I never used to like smoothies or milkshakes either, but luckily as I got older, my tastes buds have changed and I have become an almost daily smoothie drinker. I mean what better way to get in a ton of greens and not actually be eating a salad?!
My absolute favorite smoothie to make for breakfast, post workout, or as a little sweet treat before bed is a Mint Chip Smoothie.
You’re probably doubting me because who could possibly compare a smoothie to ice cream, but even my super picky, junk food eating brothers asked me for the recipe for this smoothie. They actually prefer it to their ice cream filled milkshakes now and I've even caught them making them themselves a couple times!
My go-to smoothie:
Handful of Spinach
1/2 Frozen Banana
1/3 Cup Frozen Cauliflower
1 Scoop of Vanilla Protein Powder*
Water, Plant Mylk, or Yogurt until desired thickness*
Drizzle of Peppermint Oil
Optional: 1/2 tsp Maca Powder for a hormone balancing boost
Optional: 1/2-1 tsp Spirulina for an extra hit of energy
And any toppings you want - My favorites are chia and hemp seeds, cacao nibs, coconut flakes, and a big scoop of homemade coconut yogurt!

Sometimes I like to make the smoothie thin for on-the-go and sometimes I like a thick, almost ice cream like bowl! Lately, I have been loving adding Kite Hill, Forager Probiotic Drinkable Yogurt, or my homemade coconut or cashew yogurt to help with a little probiotic boost.
Starts my morning with a ton of nutrients and vitamins and tastes freakin’ delicious!!
